Having been in Japan for 18+ years now and a pastry chef by trade, Derek Thomas has worked in various pastry kitchens including head of R & D for a company who makes desserts for the likes of Starbuck's, Disney, family restaurants and the like before taking over ownership of Pizzakaya in 2003 from the original owner, Brendan Murphy. A few years after Brendan started Pizzakaya he acquired a partner, Jon Anderson, who currently lives is Seattle, and is still an important part of Pizzakaya.
