
Today Mr. Derek Thomas joins us today to talk about his restaurant-Pizzakaya. He introduced the history, service and majority customers of his restaurant. Due to the different needs between Japanese customers and western customers, he adjusts his strategies including the size, flavor and so on. How does his business survive in this declined economy? Having been in Japan for 18+ years now and a pastry chef by trade, Derek Thomas has worked in various pastry kitchens including head of R & D for a company who makes desserts for the likes of Starbuck's, Disney, family restaurants and the like before taking over ownership of Pizzakaya in 2003 from the original owner, Brendan Murphy. A few years after Brendan started Pizzakaya he acquired a partner, Jon Anderson, who currently lives is Seattle, and is still an important part of Pizzakaya. Pizzakaya has been through many changes but one thing remains the same, great pizza.
